A unique First Nations bush-tucker meets wild-style Southern Italian dining experience collaboration between Indigenous Cultural Adventures and Antica Australis in Carcoar.

A five-course set menu featuring emu on wombok with bush pesto; crocodile marinated in lemon myrtle; a signature Antica Australis dish of slow-cooked kangaroo shank ragu cannelloni with bechemal sauce & truffle honey (cannelloni made in the original ancient Roman style using crepes); Warrigal & Rivermint greens warmed with local Kalavista olive oil; followed by finger lime gelato with roasted wattleseed biscotti crumb and espresso.
